While growing up in Ukraine, we used to have for breakfast any leftovers from dinner. However, my mom used to make delicious syrniki (pancakes made with farmer’s cheese), for weekend mornings. She used homemade farmers cheese (tvorog) and topped it with delicious freshly made sour cream and homemade jem.
Nowadays, I don’t always make tvorog at home and store-bought farmer’s cheese just doesn’t give the same results. Also, the key ingredient in these pancakes is rice flour, as it holds syrniki very well together.
Syrniki are slightly sweet, cheesy Russian pancakes made from Farmer’s cheese. They are super soft and just slightly sweet on the inside. These pancakes filled with cheesy goodness are just so delicious.
Just make them ahead of time and enjoy with some aromatic cup of coffee or tea.

In a large bowl combine cottage cheese, 1 egg, 1/2 tsp vanilla extract, and 2 tablespoons of maple syrup until well incorporated. Add 1/2 cup of rice flour, 1/2 cup of raisins, Zest of one lemon, 1/2 tsp of balking powder and mix all the ingredients until well blended.

Heat a large non-stick pan over medium heat.

Saute over med heat about 3 min per side or until they are golden.

Serve syrniki with jam, nutella, or sour cream.
